The method of spray drying of dispersion or emulsion of encapsulated substance containing polymer and solvent (both organic and aqueous) consists in dispersing them into a flow of heat transfer gas. From the physicochemical point of view, the phenomenon of coacervation is caused by intra- and intermolecular interaction involving polyelectrolyte ions or polyelectrolytes, leading to a change in the conformation of polyelectrolyte macromolecules in solution, the degree of their hydration and, as a consequence, to a decrease in their solubility. Coacervation in the interaction of a polymer solution and a low molecular substance is called simple. It is based on the physicochemical mechanism of sticking, “raking into a pile” of dissolved molecules and separation of water from them with the help of water-removing agents. Simple coacervation is caused by adding inorganic salts or other lyophilic substances, as well as by changing the temperature or diluting the system. Complex coacervation is observed when two or more polymers, whose macromolecules carry opposite charges, interact and neutralize each other.

The merging of the formed droplets leads to the separation of the system into two equilibrium liquid layers: a layer with a low content of polyelectrolyte and a layer with an increased concentration of polyelectrolyte, called the coacervate layer.
