Powders obtained by spray drying and combined spray and freeze drying have fundamental differences in particle shape. At the same time, the residual moisture content, surface properties of particles obtained by these two methods were similar. In both cases, the bulkiness was unsatisfactory. With the use of additives, an improvement in bulkiness was observed. In view of the above, it becomes obvious that there is a need to improve the energy efficiency of freeze dehydration technology, to develop new equipment, to create combined drying methods aimed at improving the quality of the obtained products. One of the tasks of improving the process of freeze drying (reducing the duration, energy consumption of the process) with simultaneous solution of the problems of quality of the obtained products can be solved by transition from drying in vacuum to drying at atmospheric pressure.

For most crops, however, freeze drying remains the only suitable method. Recent research by scientists has shown that spray drying and freeze drying can be combined in a single process to produce protein-rich dry powders, with the main advantage of obtaining a highly dispersed product.
The process was carried out in two stages: spraying of the solution in a metal container filled with liquid nitrogen under constant shaking; freeze drying in a Crist vacuum lyophilizer. At the same time, the quality of products dried by the combined method (degree of preservation of valuable properties, original structure, activity of ingredients) is not inferior to freeze-dried in vacuum.

The products have better bulkiness and morphology, and there is no sintering of the top layer. The powders obtained in this way can be used for further encapsulation, pressing, epidermal administration, as well as for increasing the solubility of poorly soluble substances. Some scientists have also investigated the effect of the drying method on powder friability, which depends on a combination of different factors: size, shape, and surface properties of the particles. The comparison of spray and combined spray and freeze drying methods was carried out in terms of such indicators as: particle size and shape; moisture content, physical and chemical properties; the influence of additives and coatings on the friability of powders.
